A remember a person who worked in the food industry telling an audience of people the reason why restaurant food tastes so amazing is because they use real butter.

Si, from A Bountiful Kitchen blog says that sometimes when you switch fat in a recipe it can mean you have less flavour and the texture is not as great. But as far as this recipe is concerned it she feels that is not the case. Certainly at home we always use Solid Coconut Oil in our home made bread, and it doesn’t make it taste too Coconut in flavour.

In this recipe, we’d say the banana flavour would certainly mask many other flavours anyway.

Cheese Garlic + Salt Sandwich Bread Bun

Delicious strongly flavoured sandwich bread variation

Sandwich bread” is one of the homemade bread recipes our family use and we made it full of Coconut goodness.

One day one of my girls told me “I’ve got the most amazing bread recipe!” I thought, that’s nice…

I’ve got three teenage daughters that make bread at home. I’ve made bread, my wife has made bread. It really would take something to impress us. Each of us has tried different recipes.

Well, nothing prepared us for the smoothness of this sandwich bread, even when half the bread is freshly milled/ground wheat.

Another variation of this recipe is plaiting it

Make a snake shape with the dough and season to taste by choosing from one of two methods.

  1. Spread lightly heated Virgin Coconut Oil on the tray (try Sea Breeze from Tonga Virgin Coconut Oil). Then scatter Billies Seasoned Garlic on top. Then roll the dough snake, then plait.
  2. Plait the bread dough snake. Pour and paste Virgin Coconut Oil on top (try Sea Breeze from Tonga Virgin Coconut Oil). Scatter Billies Seasoned Garlic on top.

A third variation of this recipe is a cheese garlic and salt flavoured scroll

Coconut Banana Bread by Julia and Libby

Coconut Banana Bread

When I saw this coconut banana bread recipe, I thought, “I’ve got to share this with the email list!”

What we like about this recipe is that it includes all sorts of real food! Dr Libby, from Auckland and Sydney* says something like, “Women are under the false impression that to lose weight they need to eat like a mouse and exercise like a maniac!”

So here is a cake with no refined sugar.

Julia and Libby Blog have this to say about it.

“Fresh Banana bread is one of my favourite comfort foods.  It is a nourishing treat especially on a cold winters day. A lot of the recipes that are on the internet for banana bread are high in refined sugar and full of white flour. I decided that I was going to experiment and make a refined sugar free, grain free, gluten free, banana bread and I can honestly say that this recipe for banana bread is so delicious and best of all its guilt free.

This recipe can be used to make 12 muffins if you prefer them smaller, making them perfect for school lunches.”

Ingredients:

    3 ripe bananas (1 extra banana if you want to place on top before baking)
    6 free range eggs
    3 T melted raw honey
    1/3 cup melted organic butter
    1 tsp organic vanilla essence

1/2 cup coconut flour

          1 T coconut oil

    1 tsp gluten free baking powder
    1 tsp baking soda
    1 1/2 T cinnamon
    1/2 tsp salt
    1/3 cup finely chopped nuts – I used walnuts

1/3 cup desiccated coconut (optional)
