Nui Organic Coconut sugar is 100% sap from the coconut tree blossoms. Not mixed with cane sugar or anything else for that matter.
The Coconut tree sap (from the blossoms of the coconut tree blooms) is low on the GI index. It has a low GI (Glycemic Index) of 35 (honey GI = 50, white sugar GI = 65 ), so it’s great for diabetics (in moderation) and those concerned with weight loss.
Coconut sugar produces a slow energy release, which sustains the human body through your daily activities without regular sugar “highs” and “lows.”
Coconut sugar has a nutritional content far richer than other commercially available sweeteners.

Coconut sugar is gluten free
Have you ever seen a child with Downs Syndrome at a party, who is trying to avoid gluten by eating jelly beans? (It’s quite common for them to eat a lot of jelly beans while out at children’s birthday parties, because other children are eating foods that may add to the negative behavioural patterns of a Downs Syndrome child.
So they eat Jelly beans, which are lollies made with refined white sugar, another gluten free ingredient.
Gluten free snacks made with coconut sugar would also be gluten free, toffee flavoured, and low on GI.
Coconut sugar is high in minerals and amino acids like Glutamic Acid. Glutamic Acid is important in the body’s metabolism and as a neuro transmitter.

How do you use this for baking?
It just so happens that Sally Fallon wrote a nice fudge recipe. She is author of Nourishing Traditions, a book we (the Smith family) have at home. Well, I found this same recipe, with some adaptions on the internet. Kimi Harris, of http://www.thenourishinggourmet.com adapted the recipe, and I’ll give you a taste of the recipe here.
Firstly let’s look at what allergies this fudge recipe may set off.
- It has cocoa powder. So that might be a problem for some.
- It is low GI
- Has no soy products (just cocoa powder is not chocolate, which may have soy ingredients in it).
- It is gluten free

We’ve included our recommended ingredients
1/2 cup of virgin coconut oil Ceres brand, or Zenian Extra Light (yellow label on dark green background), if you don’t want a strong flavour
1/2 cup of coconut sugar (the crystalised kind, as seen above)
1/2 cup of cocoa powder
Dash of sea salt- Shy Sheep Limited, which run this site will soon be selling Himalyan Crstal salt, of Alexander the Great fame
1/2 teaspoon vanilla
