Coconut Oil Easy Lemon Cake – an easy bake
It’s not too fancy, and yes it has refined sugar. An easy recipe to start.

Ingredients
Cake
- 1 cup Self raising flour (Alternatively, 1 cup of plain flour and 11⁄2 teaspoons of baking powder.)
- 1 tablespoon Cornflour (Alternatively custard powder)
- 125g Coconut oil melted
- 3/4 cups Caster sugar
- 1/4 cup Milk
- 2 Eggs
- 2 teaspoons Simo's Lemon Zest (Alternatively juice of 1 lemon and the zest of 2 lemons)
Icing
- 1 cup Icing sugar (sugar cane)
- 12 teaspoons Simo's Lemon Zest (Alternatively, or zest and enough juice of 1 lemon to make a glazed icing.)
Directions

| Step 1 | |
| Preheat Oven to 180oC. | |
| Step 2 | |
| Line a greased loaf pan with baking paper. | |
| Step 3 | |
| Place all ingredients into a large mixer bowl. | |
| Step 4 | |
| Using electric beater, beat for 6 minutes until pale and creamy if using butter, increased in volume for coconut oil. It takes longer for the coconut oil mixture to beat than the butter mixture so be patient. | |
| Step 5 | |
| Spread into the loaf tin and smooth the top. | |
| Step 6 | |
| Bake for 35-40 minutes or until a toothpick inserted into the centre of the cake comes out clean. | |
| Step 7 | |
| Cool in tin for 510 minutes before turning out onto a cooling rack. | |
| Icing | |
| Step 8 | |
| Mix together icing sugar and Simo's zest with a little boiling water for icing, or icing sugar zest and juice of lemon. | |
