Roast Kumara Rounds and Coconut Oil Sweet Potatoes

Roast Kumara Rounds are AIP Friendly. That’s good news for those on an Auto Immune Protocol diet. To make Kumara Rounds all you need to do is slice Kumara, and cover it in fat (Virgin Coconut Oil). Add salt and herbs as required, and you can feel people on some of the most restrictive diets around. It is Vegan, Vegetarian, Paleo and AIP friendly. It is also grain free.

Preheat the oven to 250º C (475º F).

Kimi Harris used a variety of Sweet Potatoes, including Red Potatoes, which are similar to “Maori Potatoes” in New Zealand. I use Kumara, as you can see below they also come in a number of colours.

Children love Kumara, red or golden. They can also learn to love Maori Potatoes, which are dark red inside, and usually extremely small, but bigger than yams.


  • Kumera (Red or Golden, or even Maori Potatoes) (Make sure they are scrubbed clean)
  • Virgin Coconut Oil (It will not get too hot when absorbed)
  • Salt (Sea Salt, Herb Salt, Himalayan Crystal Salt, whichever)
  • Rosemary (Optional: sprinkle on top)

Don’t be restricted in what you do to flavour your rounds. Mixed herbs, herb salt, garlic, spices, you name it. It might work.
