Why did Julia and Libby add Coconut Oil to their NZ Manuka Honey with LSA Muesli Bars recipe?

We added coconut oil to the bars as this good fat will keep you feeling full for longer and helps to solidify the bars.”

The Matthews sisters, Julia and Libby have been hard at work both professionally and in exercise training. This recipe will certainly come in handy for a busy lifestyle. In the introduction to this post on their Facebook page they also have this to say.

“We have created some muesli bars that can be eaten for breakfast or as a snack and are very simple to make. The bars are made using the new Sanitarium Cereals ‪#‎OptionsMuesli‬ , along with LSA or flaxseed meal and eggs as the base and are sweetened with cinnamon and manuka honey.”

Muesli Bars made with Coconut Oil using Options Muesli - Sanitarium Cereals. Recipe by Julia&


  • 3 cups Options Muesli (Sanitarium Cereals)
  • 1/2 cup LSA or flaxseed meal
  • 3 organic eggs
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup manuka honey (gently melted)
  • 1/4 coconut oil (melted)


Step 1
Preheat oven to 180 degrees fan bake
Step 2
Combine muesli, LSA or flaxseed, eggs, vanilla, cinnamon, coconut oil and honey in a bowl and stir until all ingredients are combined.
Step 3
Spoon into a lined baking tin. Bake for 20 - 25 minutes.
Step 4
Cool and cut into pieces.
Step 5
Store in an airtight container.

Some people won’t use this recipe because it involves using eggs. Chia seeds are the alternative to eggs in baking. But that consideration is beyond the scope of this recipe.
