“[This dish] is SO simple to make and if you are a coconut fan, lactose intollerant or follow the Paleo diet than you are going to love this dish.”


500 grams Organic Chicken Thighs (you can use breast, however I prefer thighs as they are cheaper and cook faster).
2x Organic Eggs
1/2 cup Coconut Milk
1x cup Almond Meal
1x cup Desiccated Coconut

Instructions for the Chicken and Mango Salsa:
Mango is a summer fruit which New Zealand imports from Australia in our summer and it grows abundantly in India during their summer. It is a relatively cost effective choice of fruit for New Zealanders to buy. It always goes well with Chicken.
