Feijoa muffin | Coconut Oil Shop | The Coconut Resort Blog


100g butter (or coconut oil for a dairy-free muffin)
2t vanilla essence
1/4c Natvia (or xylitol, erythritol, THM Sweet Blend)
4 eggs
2/3c ground golden flaxseed
2/3c ground hazelnut or almond flour
1/2t ground nutmeg
pinch salt
1c feijoas, peeled and chopped

  1. Delicious – this is now my best whole food muffin recipe, will be experimenting with different fruit and flavours. I added 1 tsp baking soda and these are then the lightest, fluffiest whole food muffins I’ve ever made, first time to use linseed flour, they are so moist and stay moist even after a few days. Thanks heaps, Emma, gluten free Feijoa muffins is a keeper.
