Dairy Free Raspberry Raw Cheesecake with Julia and Libby Blog

With Dairy Free Raspberry Raw Cheesecake “RAW” does not have to be tasteless. This plant-based dessert that requires only a blender to prepare and it is so simple to make.

When this was Dairy Free Raspberry Raw Cheesecake was presented to Julia Matthews’ 8 year old niece, she said, “Auntie Juls this cake is yummy are you sure it’s healthy?”.

There is also some other sage advice about the ingredients on offer as well. “If you cannot find cheap raspberries use any other berry, if you cannot find macadamias then use almonds and to keep the cake filling white don’t use berries in the filling.”

This Dairy Free Raspberry Raw Cheesecake is

  • Dairy-free
  • Refined sugar free
  • Dessert
  • Egg-free
  • Gluten-free
  • Soy-free
  • LCHF (Low Carbohydrate, High Fat)

Prep time: 15-20 minutes.

Crust Ingredients:
1 cup walnuts
1 cup raw macadamia nuts
1/2 cup medjool dates, pitted
1/4 cup dried coconut

Filling Ingredients:
3 cups raw cashews. Soak overnight or for at least a few hours before using.
1 cup fresh or frozen raspberries
3/4 cup lemon juice
1/2 cup water
1/4 cup coconut sugar (or stevia)
1/4 cup honey, melted
1 cup coconut oil, melted
1 teaspoon pure vanilla essence
Pinch himalayan salt

Raspberry Sauce:
1 cup of fresh or frozen raspberries
1/2 cup medjool dates, pitted
Juice of 1 lemon

Day visitors can also access a lot of the material at “The Coconut Cinema” – CampCoconutNZ – our youtube channel.

Search The Coconut Oil Shop, using the site menu itmes at the top of the page, like “Products“, “Start Here“, “Reviews” or “Updates“. You can  can certainly gain a world of information there, as well as products. But the real learning about Coconuts starts in the menu tabs below the big picture at the top of the page. The menu tabs, “Learn“, “Start Learning“, and “Resources“, all give access to free information. “Subscribe” describes our premium content.

Our online resort has around 560 day-campers. These people login to Camp Coconut, and gain access to hidden material.

In addition to the free courses and restricted access materials that day-campers enjoy, we realise that some of you will want more questions answered. So we’re going to set up The Perpetual Camp Fire.

We’ll also host specific video courses, and other things we’ll announce over time.

    Hi guys, Dr Mercola (Mercola.com) has an in depth explanation of just how beneficial coconut oil is to us and how it does not change to a trans fat when heated unlike most other fats/oils. Maybe you could put a bit of that info up on your site to educate the general public?
