Coconut Berry Smoothie with Milk (Serves 2)
In Bruce Fife’s brand new book, the Ketogenic Diet, refined sugar and carbohydrates get a jolly good beating up (so to speak). Bruce really gets into specifics about what he calls carbohydrate sensitivity, and its effect on body weight. Part of the solution, he asserts, is to get a balance between fat (e.g. Coconut Oil and Coconut Butter), protein (milk, for example), non-digestible fibre (Creamed Coconut, for example) and carbohydrates (fruit, for example).
This smoothie sets out to add more non-digestible fibre. If you don’t really understand what I’m referring to, then don’t worry. Just try this recipe, as part of your efforts to put more Coconut in your diet, and maintain a good body weight for your frame.
1 cup mixed berries (blueberries, strawberries, boysenberries etc.)
2/3 cup of plain yoghurt
1/2 cup of whole milk – consider Village Milk (raw milk) if you’re near one, or something similar.
2-3 tablespoons of Virgin Coconut Oil
3-4 tablespoons of Rich Gold Creamed Coconut / Coconut Butter
2 tablespoons of pumpkin seeds
2 tablespoons of sunflower seeds
2 tablespoons of Gold Sprinkle desiccated Coconut
1 ripe banana
(Optional) 1/2 cup of black currant / orange / apple juice
Combine all ingredients in a blender, until smooth.
Consume immediately or refrigerate in a closed jug for up to two days.

There are members of our family that enjoy this smoothie, every day. We want to use power of fat and fibre, found in Creamed Coconut, to help balance out the effects of carbohydrates like rice, potatoes, and even the carbs found in tomatoes, and greens.
