Nicola Galloway (Homegrown Kitchen blog) writes this about the burgers:

“When I remade these to test the recipe and photograph the burgers I decided to serve them in lettuce cups rather than burger buns. As meat burgers are quite heavy, serving them in a lettuce cup lightens up the meal. Perfect for a hot summers evening.” She also states, “The secret ingredient in these flavoursome and tender burgers is good ol’ homemade plum sauce.” Check out the recipe link for more comments and how to make it.

Ingredients:

approx. 500g venison mince (I used Silver Fern Farms)

half small red onion or 1 shallot, finely chopped

1 free-range egg

3 Tbsp homemade plum sauce (or fruit chutney)

1 teaspoon grainy mustard

sprig of parsley, chopped

1/4 teaspoon salt

cracked pepper

two large handfuls of rolled oats + extra oats for the crust

It’s our 12-year-old daughter’s job to make sure we always have homemade coconut oil mayonnaise in our pantry. Sometimes she will quickly whiz some up after the meal is served on the table. Yes, it’s that easy, and healthy, too!

The ingredients:

1 large Egg

1 tablespoon Apple Cider Vinegar or Fresh Lemon Juice (adjust the amount according to taste)

1/2 teaspoon of Mustard Powder (optional)

1 cup of melted White Gold Coconut Oil*

Salt and Pepper to taste
