- 3 eggs
- 2 tablespoons melted coconut oil
- 1/3 cup coconut sugar
- 1/4 teaspoon salt
- 1/4 cup coconut flour
- 1/4 teaspoon baking powder
- 3 tablespoons coconut chips
- Blend together eggs, coconut oil, coconut sugar and salt.
- Sift coconut flour and baking powder into the above mixture, and whisk into batter until there are no lumps.
- Fill muffin cups halfway with batter. Sprinkle coconut chips on top.
- Bake at 205 degrees C for 15 minutes.
Makes 6 muffins.
