Coconut Flour Muffins



  1. Blend together eggs, coconut oil, coconut sugar and salt.
  2. Sift coconut flour and baking powder into the above mixture, and whisk into batter until there are no lumps.
  3. Fill muffin cups halfway with batter. Sprinkle coconut chips on top.
  4. Bake at 205 degrees C for 15 minutes.

Makes 6 muffins.
